Salad is one of my favorite foods, however I know a lot of people find them boring. Take away meat, eggs, and cheese, and all that’s left is grassy spinach and lettuce… wrong! Although eating vegan requires a little more creativity, it does not mean every meal is boring. This list of 27 high-protein vegan salad recipes proves it!
